Engagement Session: Devin & Josh



I love Folly Beach and this beautiful spot made for a day in the sun and some great Engagement Portraits. Although, it was very chilly and the wind was ridiculous, we still had a great time and got these gorgeous shots! Devin was so sweet, giving me creative reign and even wearing a "flowy" dress so my vision could come to life. It was so nice having someone completely on board with my thought process. We both love the finished product!

Lemon Chicken Piccatta

Sooooo this recipe was so yummy and probably one of my favorite recipes I have found on Pinterest

Who knew my family was a fan of capers?!

Served over angel hair pasta, the combination of the chicken, lemon and light, creamy sauce was on point and a people pleaser. I had company over and it was a big hit with everyone including the kiddos!

Engagement Session: Katheryne & Ralph

Honey Balsamic Glazed Roast Duck, Whipped Sweet Potatoes & an Asparagus, Mint Puree

This was sooooo yummy! I was able to find a 5lb duck at Ole Timey Meat Market for just under $20. We love duck in this house so why not try it out right?! Find the recipe here!


I also decided to whip the sweet potatoes with a little heavy cream, butter & cinnamon after the potatoes were cooked in the oven for about an hour at 400 degrees. 


The puree was also delicious... I added a little organic sugar and mint to the steamed asparagus and whaaalaaa yummy puree! 


If you enjoy duck, give it a shot and cook it at home! Its not hard to have a 5 star meal at your own table.

Mexican Chicken Stuffed Roasted Red Peppers

I love stuffed just about anything and I was wanting a healthy, creative lunch & I think I was pretty successful! Mom win! 

I had some red peppers that I needed to use from my Lane Specialty Gardens basket and left over chicken from my Whole chicken made Tuesday night!

Preheat oven to 350 degrees.
Cut peppers in half and remove seeds.
Place on baking sheet, open side up.

In a bowl mix shredded chicken, a few tablespoons of Salsa, and some shredded Mexican cheese until thoroughly mixed.
Add any herbs or spices of your choosing.

Spoon Chicken mixture into peppers.
Sprinkle with a little bit more cheese.

Bake in oven for 30 minutes.
Top with Greek Yogurt (or sour cream) and fresh Avocado and ENJOY!

Crab Stuffed Flounder, Brown Rice & Fresh Salad


We have been trying to eat more fish as of late, which has been really great actually. I cannot take credit for this one. 

Most of my viewers are Columbia, SC natives and if you are aren't I apologize because you are missing out. Ole Timey Meat Market in Lexington, Irmo, and Downtown is AMAZING! I bought these pre-made fresh Crab Stuffed Flounder Fillets for $4.99.

They were so easy to prepare in the oven at 375 degrees for about 35 mins and were perfect! 

The reason behind this post is to make people aware that amazing meals such as this are hiding in your local meat markets and grocery stores. Shop local and see what wonderful dishes wind up on your table!

Thanks to a dear friend of mine for letting me know about this opportunity (Amy - I love you)... I picked up this amazing basket of goodies this week. I love the challenge of trying to use the contents within a week.

Whole Chicken with Sweet Potatoes and Roasted Parmesan Cauliflower

Whole Chicken, Roasted Cauliflower and Sweet Potatoes:


I love cooking a nice whole chicken! You can use the Dutch Oven, Roast in the Oven, Crockpot, Smoker, Grill, but we happen to have an oil-less fryer (The Charbroil Big Easy) which is an extremely easy to use, healthy and tasty way to cook all kinds of things. You can order yours here!

I stuck this five pounder in the Big Easy for an hour and 45 minutes and it is utter perfection. 


To prepare the bird, be sure the bird is thawed completely. Rinse thoroughly with cold water. 
Skin an onion and cut small slits in each end to release the flavor, place inside chicken.
Follow onion with a half lemon.

I then coat the bird with lemon juice from the other half of the lemon. 

Rub bird with your favorite spices. I use minced garlic, red pepper flakes, salt, pepper, lemon pepper, dried thyme, fresh rosemary, and anything else in my spice cabinet. Let sit in refrigerator for 2 hours or so. Give or take. 

When the time is right to put the bird in the big easy, pat dry and place in Big Easy Cage. 

Cook for 1 hour and 45 minutes or until breast of chicken is 165 degrees. 

When cooking is complete, let rest for 10 minutes and serve. 

Cauliflower is easy..... place pieces of cauliflower on baking sheet. Coat with olive oil, salt, pepper and parmesan cheese. Roast in oven on 400 degrees for 25-30 minutes. 

Cook sweet potatoes the way you like them!

This is a healthy, lean, man approved meal that leaves the family full and happy!

Hanging Herb Garden: DIY

Hanging Herb Garden

If you are like me, you have limited space in your kitchen. Luckily, I have this beautiful bay window with great lighting. I love having fresh herbs around the house so what better way to make use of the glorious light. I am a fan of mason jars and love the blue ones so that is what I went with. 

I carefully planted the herbs and let them get happy in the window sill for a few days

I then bought hooks to drill into the wall. Well, when I went to do this I realized the bay window frame is larger than I thought and metal. This might be rookie news to some of you but hey I just found this out. I returned the hardware and opted for some adhesive hooks that hold 3-5 pounds. (cheaper and easier anyway)

I bought some wire and wrapped it around the jars with a little loop for hanging. 

Hung the adhesive hooks, and then the jars and below is the finished product!

I am very happy with the result. The visual aspect in the kitchen is really nice yet still easy to get to, and the whole project was fairly easy!
