Beef Sirloin with Whole Wheat Penne in Vodka Sauce and Roasted Parmesan Zucchini & Squash

Can you say YUM?!

My husband likes to cook the beef. He marinates them and then pan sears them in a skillet with butter, then he lets them cook in the Charbroil Big Easy until cooked to an inner temperature of 135 degrees.

Prepare pasta of your choosing...

Follow this Vodka Sauce Recipe from Pinterest. Which turned out soooo good!

Cut up your Zucchini & Squash, line up on a baking sheet... drizzle with Olive oil, salt & Pepper and Parmesan cheese. Bake at 375 Degrees for 30 minutes and they will be delish... Easy Peasy!

Enjoy!

Shrimp Alfredo

This meal is always a winner! I pick up a few pounds of frozen, peeled, deveined raw shrimp and keep it in the refrigerator so to begin just thaw 1 pound for this dish. Serves 4. It won't take long.

Prepare your fettuccine noodles, gluten free, regular, whole wheat, whatever you prefer.

Warm skillet to medium heat with a tbsp of butter, a tbsp of minced garlic, and even a dash of olive oil and lemon juice.  Sauté shrimp in skillet for 3-4 minutes or until pink and smelling amazing.

To save on time feel free to use your favorite brand of alfredo sauce and heat in sauce pan, always helps to add parmesan and fresh herbs. I use my pre-made Cauliflower Alfredo Sauce...

Finally mix shrimp, pasta, sauce, fresh herbs, some parmesan and lemon zest and you have dynamite Shrimp Alfredo! About 30 minutes total!

Engagement Session: Devin & Josh

I love Folly Beach and this beautiful spot made for a day in the sun and some great Engagement Portraits. Although, it was very chilly and the wind was ridiculous, we still had a great time and got these gorgeous shots! Devin was so sweet, giving me creative reign and even wearing a "flowy" dress so my vision could come to life. It was so nice having someone completely on board with my thought process. We both love the finished product!

Lemon Chicken Piccatta

Sooooo this recipe was so yummy and probably one of my favorite recipes I have found on Pinterest

Who knew my family was a fan of capers?!

Served over angel hair pasta, the combination of the chicken, lemon and light, creamy sauce was on point and a people pleaser. I had company over and it was a big hit with everyone including the kiddos!

You can find the recipe here! Easy and quick to prepare... I will definitely be making it again soon!

You are going to love it!
