Mary - Maternity Session








Low Country Boil

Low Country Boil is always delicious and great for company. 
We had some great friends over Friday night and decided to hang out outside by the fire and get nice and messy with this lovely meal. 

You will need...

1LB Raw Shrimp and any crab legs, soft-shell crab, lobster, etc.
4 ears of corn - Halved
Fresh Parsley
Package of smoked Andouille Sausage
Any kind of small potatoes ( I used petite red) - Halved
Old Bay Seasoning
Bay Leaves
Salt & Pepper
Herbed Butter
1- 12oz Beer
1- Onion - Halved


This is so easy!

Cut Sausage into 1 inch circles.... place the following ingredients in dutch oven or large boiling pot.
1 heaping Tbsp of Old Bay seasoning
Salt & Pepper
2 Bay Leaves
Halved Onion
Corn Halves
Potato Halves
Add the 12 oz of beer
Then add water the rest of the way until ingredients are all submerged
Bring to a boil and let boil for 30-45 or until potatoes are tender.

Add your shrimp and any other seafood at this point and continue boiling for 5 minutes. 
Place in a bowl and serve with melted herb butter and top with fresh chopped parsley!

Pan-Seared Fish Tacos with Pineapple, Avocado Pico De Gallo

I love tacos!!! 

This is a healthy taco, could be healthier with lettuce wraps or spinach tortillas, but to each their own! 

First prepare your pico de gallo...
Dice the following:
Tomato
Onion
Avocado
and Pineapple

Mix in a bowl

Chop some fresh cilantro and add it to the mix
Also, squeeze fresh lime juice over mixture. 

Mix thoroughly and enjoy on your taco and with some blue corn tortilla chips. 

Use a white fish of your choosing. I used Tilapia. Pan-Sear in a tbsp of Olive oil and a tsp of butter... Sear until cooked through and slightly golden brown on the outside.

Top tacos with freshly shredded cheddar jack cheese, hot sauce and any other topping you would like... I used extra avocado, greek yogurt, and red cabbage.
